For Portobello Mushroom, Chicken, & Brown Rice Dinner:

- Cook the brown rice, according to its direction. Cook the chicken, as well. 

- In the meantime, combine the diced heirloom tomato, diced fresh basil, 1 tsp. sea salt, 1 tsp. black pepper, 1 tsp. dried lemon thyme, 1 tbsp. Batistini Farms Organic Extra Virgin Olive Oil, and Batistini Farms Apple Vinegar in a small bowl. Mix softly with a serving spoon. Set aside. 

- In a separate bowl, combine the portobello mushrooms, dried basil, 1 tbsp. Batistini Farms Organic Notes Extra Virgin Olive Oil, 1 tsp. sea salt, 1 tsp. black pepper, dried oregano, 1 tsp. dried lemon thyme, and garlic powder. 

- In a pan over medium heat, add the mushrooms so they are not layered on top of each other. Cook for 2-3 minutes on each side. 

- Serve the mushrooms on top of brown rice, with the basil salsa, and chicken.
