Lemon Sugar Cookies with Olive Oil
1/3 of Batistini Farms Classic Olive Oil (plus 2 tbsp, if needed)
2 1/4 cups of all-purpose flour
1/2 tsp of salt
1/2 tsp of baking powder
1/2 tsp of baking soda
1 cup + 1/2 cup of granulated sugar (or coconut sugar)
2 large eggs
2 tbsp of lemon juice
1 tbsp of finely grated, lemon zest
1/2 tsp of vanilla extract
Preheat oven to 350 F.
In a large bowl, combine flour, salt, baking soda, and baking powder together. In a separate bowl, combine 1 cup of sugar and Batistini Farms Classic Olive Oil.
After sugar and olive oil is mixed well, add eggs, vanilla extract, lemon juice, and lemon zest.
Combine lemon/sugar mixture with flour mixture. Mix until a soft, but oily dough forms. Add more olive oil if necessary.
Form the dough into 1-2" thick balls, and lightly coat in the remaining sugar. Line the cookie balls on a baking tray, and flatten until ~ 1/2" thick. Bake for 10-14 minutes, or until golden brown.
