Italian Orecchiette Parmesan Pasta Dish
4 tbsp of Batistini Farms Basil Olive Oil
10-12 Swiss brown mushrooms, cut into fours
3/4 - 1 cup of orecchiette pasta
2 garlic cloves, minced
1/2 cup of parmesan cheese, grated
1/2 onion, finely chopped
Bring a large pot of water to boil, with a dash of salt. Once the water is boiled, add the pasta and cook per pasta's packet instructions minus 1 minute.
In a pot over medium low, allow 2 tbsp of oil to heat up. Add in onions and garlic, and cook for another 2 minutes. Turn heat up to high, and add in mushrooms. Add in remaining 2 tbsp of oil. Cook for 5-7 minutes, or until golden.
Once pasta is done, reserve 3/4 cup of pasta water and drain the pasta. In the mushroom pot, add in the pasta, parmesan, and reserved pasta water. Season with salt&pepper.
Garnish with fresh parmesan and parsley.
