Caprese-Stuffed Baked Chicken


- 3 Chicken breasts
- 6 slices Mozzarella cheese
- 6 slices Tomatoes or a handful of cherry tomatoes
- handful of Basil
- Batistini Farms Lemon Olive Oil
- 4 tbsp Batistini Farms Estate 15 Balsamic Vinegar
- 2-3 tbsp coconut sugar
- 1-2 tbsp minced garlic
- 2 tbsp of thyme
- 1-2 tbsp of salt
- 2 tbsp of pepper
- 2 tbsp of garlic powder

Preheat oven 400 F.

In a small bowl, mix thyme, salt, pepper, and garlic powder together.

Cut each chicken breast in the middle, horizontal, but do not cut all the way through. So, the chicken remains one piece. Rub the chicken with the seasoning mix and a little Batistini Farms Lemon Olive Oil, on every side.

In the middle of the chickens, layer with mozzarella cheese, tomatoes, and basil.

In a separate small bowl, combine sugar, garlic, and Batistini Farms Estate 15 Balsamic Vinegar.

Place caprese-stuffed chicken breasts in a baking pan, and rub balsamic mixture on top on each one.

Bake for 30-40 minutes. (Start to check around 25 minutes, depending on size of chicken)

OPTIONAL: pour out excess liquids from pan around 25 minutes, and bake an additional 5-10 minutes.
